Classes and Demonstrations


Ever thought to yourself or to others “I would love to know how to…"?

Ever thought to yourself or to others “I would love to know how to...” Well I am more than happy to teach you! Assuming I know how to do it myself first of course. One of the reasons why I love being a chef is that one can never stop learning. There is always something new and exciting to learn.

Having worked in the best local hotels and restaurants including two with one Michelin star as well as a cruise ship, luxury yacht and a sailing ship I feel I have a good knowledge of quite a few areas and now after over 10 years of absorbing knowledge and skill it is time for me to give back.

I offer classes on a one-to-one basis or for groups. Each class comes with recipe cards and with people learning in different ways can be taught in different ways as well.

The classes currently offered are:

FISH AND SHELLFISH
PREPARATION AND COOKERY

We will go through the differences between flat and round fish and then we will go through filleting each fish.

Once the filleting is done we will go to the shellfish preparation. We will open oysters, prepare a crab a lobster.

Then the cooking! We will cook different dishes using all the fish we have prepared.

PASTA AND SAUCES

We will go through the differences between fresh and dried pasta, we will then make fresh pasta from scratch.

We will then go through making some of the 300 different types of pasta including ravioli, tagliatelle, tortellini and gnocchi and different sauces to go with them.

10 WAYS WITH CHICKEN

This is a great class for those, yes who love chicken but also, who want to get more from their money.

This class goes through many things that you can do with a whole chicken rather than spending more money on buying just the chicken breasts and doing the same thing with them day in and day out.

HAND CRAFTED CHOCOLATES

Yes, you are reading this correctly. I do a class teaching you how to make your very own hand crafted chocolates at home.

We will go through a brief history of chocolate and where it comes from and how it is made.

We will then go through making the best hot chocolate, tempering chocolate, chocolate truffles and making hand crafted chocolates from scratch filled with my famous salted caramel filling.

ROAST DINNER

For some, roast dinners are the highlight of the week. Where the whole family sits together to hear jokes and anecdotes about each other’s week.
For others, roast dinners are boring and non imaginative.
For me I believe a really great roast dinner with all the trimmings with wonderful company is very hard to beat.

In this class we go through how to get the perfect meat everytime, to get crispy and soft roast potatoes beautiful vegetables, stuffing not from a packet and  my personal favourite: the gravy!

At the end of the class we sit down and eat the fruits of our labour.

KNIFE SKILLS

In this class we will go through how to prepare and cook different vegetables in different ways, roasting, frying, stewing, boiling and poaching.

We will also go through how to chop and slice an onion properly as well as the secret to not making your eyes water when you chop and slice onions (it is not having a spoon in your mouth or silly goggles I assure you!).

A great class to build your repertoire of vegetable dishes.

MID-WEEK MEALS

A class perfect for those looking to get away from those same meals that you eat each and every week.

And what a way to impress your colleagues in the staffroom!

Each dish we go through are simple, fast and delicious of course.

BESPOKE CLASSES

Do you have that one thing, or more, that you would love to know how to make? Well as long as we already know how to make it, we can show you.

We have already done bespoke classes on How to Cook the Perfect Steak, High End Desserts, Vegetarian dishes.

Ø - Transport for me to get to where you want me to teach and back, within the BH Postcodes. Any further there may be an extra charge.

Ø - Any conversations over email or the telephone about what the lesson includes.
